1990 Caymus Cabernet Sauvignon | Wine Spectator Forums
Feb 3, 2011 · This was the regular bottling and I picked it up at a Friday nite event silent auction along with several bottles in an irregular lot. Could not find a tasting note. No great expectations. Perfect cork, 13.0% alcohol, light to medium ruby with the color fading away. Nose was still prominent with American oak. This is a fault that I often find with Caymus. Not the American oak, just too much of ...

TN: '93 Caymus Napa Cab | Wine Spectator Forums
May 2, 2005 · 1993 Caymus Napa Valley Cabernet Sauvignon -- nice nose of currant and spicy oak; same flavors on palate, hints of sage in background. Very correct, no surprises. Long, spicy finish, mildly tannic. Alcohol 12.5%, less than we usually see today, so no heat and fine tannins added to the balanced effect of this wine. Back label says 85.5% Cab Sauv, 12.6% Cab Franc, and 1.9% St. Macaire. I've ...
TN: 1994 Caymus Cabernet Sauvignon | Wine Spectator Forums
Feb 15, 2006 · Dark, rich color reveals no bricking. Muted nose of black cherries and oak. In the mouth, the cassis, currant, and cherry mouthful that I remembered from my last tasting a couple of years ago has faded. The fruit, while still there, now takes a back seat to smokey oak, cedar, and cherry tobacco. Still a nice wine but drink up. Has faded to 92 points. Make Cab, not War.

newbies and the top 100 - vs - LCBO | Wine Spectator Forums
Mar 29, 2008 · Disclaimer - a newbie - but trying …. I grabbed the top 100 list in WS for 2007 and copied to Excel - then added some columns to have some fun. I am sure I made some mistakes in looking up the ones that LCBO might have ..so .. point #1 -- why doesn't LCBO make the searches 'better'. How about a google feature I love -- 'do you mean' ...for when I mis-type or mis-spell. Second --the LCBO must ...
Evolution of the modern, fruit forward, high alcohol CA Cabernets ...
Oct 29, 2008 · Me too. I'm sipping an '06 Clos de Papes from 375ml with Mrs. DRAB right now, and it's fantastic. Label says 15.2%, and it's not in the least bit jammy, overweight, or loaded with oak. A bit of heat on the nose and back palate, but it isn't off-putting. This is typical for Rhone though, and one can't really compare the ripening of Grenache to Cabernet. They both have different sweet spots for ...
Wine & Cheese Party | Wine Spectator Forums
Sep 19, 2012 · My wife and I are hosting our 3rd annual wine & cheese party in October. I'm in charge of reds... Question: what are the most bad ass cheeses you're aware of to pair with Cabernet, and separately Zinfandel? I have some experience here- just looking for some new opinions. Thanks!
